I don't have anyone to recommend to you, Kami. However, in case you are not already aware, I want to let you know that Mexican labor laws favor the employee. It is extremely difficult to fire an employee here. Also, I have heard of employees quitting and then claiming that their employer has not paid them for months of work. Unless the employer has an accepted proof of payment and of the termination, they have to pay. I've even heard of a company in Cancun whose employee quit and claimed that the owner had promised him partial ownership. The case actually dragged on for years, I believe. The owner eventually lost everything and left the country. Of course, that whole story is secondhand. But I think you get my point.
Talk to your lawyer. But I recommend you at least do the following. 1) Have the employee sign a contract explaining the terms of employment. Expire the contract after 3 months or so. After 3 months, do another contract. 2) Have the employee sign for receipt of every single payroll.
