We've only done AI in Mexico and really enjoy not having to worry about anything. We've had a great time at all for different reasons:
Riu Cancun--our first AI and first time in Mexico...went without child and had a PARTY!!
Riu Palace RM--we went for Spring break with our son. Great pool, great service, not so great beach, room was nice but location stunk.
Catalonia RM--another trip without child. Great room, good pool, good beach, service was great. I liked the smaller resort feel...not near as much walking as the RPRM!
Food at all three were comparable however, I found the Catalonia to have better tasting mixed drinks (Riu seemed to have very sour sour mix). Also, the Riu rooms have a distinctive smell that comes home in your clothes and luggage(not necessarily a great smell)
