Well since you asked so nicely, let me just get right on that. And while it's marinating, how about a nice footrub?

So, where is the best ceviche? I think I'll start with shrimp. I don't know about anything with a bunch of tenticles in it.

Shrimp is good - my fave is the mixto. If you wanna share some I'll be happy to eat all the tenticles. YUM!

The best ceviche is on the beach. While drinking an ice cold cerveza. It is usually my lunch of choice in Playa wherever I'm at.

Ok, but don't get greedy, footrub and nothing above the knee. Now, is shrimp ceviche cooked the same as the fish one? Or do you heat cook the shrimp?
I like the fish better I think. The shrimp ceviche tastes like a mexican shrimp cocktail.

How long does it take to martinate?

I make mine with a fish like snapper, scallops, shrimp. It can marinate for about an hour or so - until everything turns opaque. Then add the other fixins - cilantro, onion, jalapeno, salt and pepper and viola!

And rub your own freaking feet.

Fine, my fee smell way better than yours!

Ummm, ok, but I just read that tomatoes where not the cause of the salmonella outbreak, they now think it might be cilantro or jalapeno peppers. And without cilantro and jalapenos it will taste like tire rubber. Might as well make it with corn tortilla instead of fish and shrimp.

Hey, can you send me some of your ceviche? I wanna try it.

Lucky me I happened to plant tomatoes, cilantro AND peppers this year (we go through a lot of all three).

And sure I'll send you some. Just let me find an envelope...they are around here somewhere....

Cool, do you plant anything that can be smoked, or drunk?

Yes, I preferred Dr. Taco to Oasis. Ceviche is good at Oasis, eh? I'm a little nervous about ceviche now...

I had a ceviche yesterday at a little no-name place on the beach somewhere in Punta Bete (we walked there, believe it or not..it'll be in my report ) and today I'm getting those all-too-familiar sharp intestinal 'pangs'. I can attribute it to the ceviche because its the only think I have eaten that noone else has also shared and I'm the only one 'panging' . But, thanks to my acidopholous and twice daily acitivia I really believe it helps me not to get totally sick, it keeps it just to a dull roar in there.

(btw...we are heading out tomorrow am...will call you when we return, prolly wed.)
