OK along the hamburger thread...what's the best place that showcases local cuisine and is delicious?

My very favorite would have to be Yaxche
When I used to work for the tourist board we took all VIPs there treating that restaurant as the specialty of the house
Owner Alberto has really found a good combination of local ingredients, international touch, his grandmother´s recipies, his chef´s imagination, and a sculptur designing his walls together with an archeologist, the back yard is very romantic and my favorite dish is kinich, that, although I have not been there for a long time I hope they still serve.
