The recipe I am using is very similar...I used chili powder instead of chili paste, and mine called for garlic oil. I made my own..ha, hope its ok.
Thanks for the tips. I'll let you guys know how it turns out, maybe a pic or two! Oh, and I couldn't find any damn banana leaves, so I am going to use tin foil.

Mmmm....Pollo Pibil. I am pretty sure that I came across a Rachel Ray Pollo Pibil recipe on the internet somewhere a little while back.
Here at home, we can find banana leaves in Chinatown or in some of the Chinese grocery stores. Do you have a Chinatown Bufante? If all else fails, you could make tamale, you can easily get corn husks, right? ![]() ![]() BTW, can you give me the name of that little 'hole in the wall' place that you and Sarita love so much in Playa?
